Moving, Missions, & Such!

Yes we are alive! We have had so much going on lately. It has been craziness! We sold our house in Spanish Fork and moved about 25 min North to Pleasant Grove. And let me tell you, moving from a house into an apartment is not the best scenario. BUT we know that it will be worth it. We made the choice about a year ago that I was going to quit my job and be a stay-at-home mommy and Tim was going to get out of Sizzler so he could go to school full-time. The downside of all of this, we would have to sell our house. We loved that place too. We built it in 2008 and it is pretty much the only place we have called home in our marriage. We loved the location and the neighborhood and it definitely was a hard choice to make. We wanted to stay there forever. But life moves on, and so do we. I am grateful for the opportunity to stay home and take care of my babies, and if that means living in an apartment then I will take it. We also knew how important it was for Tim to finish school. After a few months of basically being unemployed it was a HUGE eye opener to see how necessary it was for him to have a degree. So here we are. In a two bedroom, 995 sq. ft., 3rd floor apartment in Pleasant Grove. We are happy and finally I think we have everything unpacked and in its place. Such a great feeling!

In other news…

JB has left on his mission! We are so thrilled for him. For those of you that don’t know, JB is the oldest of my two little brothers. He is serving in Tallahassee Florida. He went into the MTC on Wednesday Feb. 23rd. He almost didn’t make it after a serious case of influenza. It pretty much knocked his socks off. We weren’t even sure if they would let him in, haha. After a five day fever of 103 degrees could you really blame them for not?! But luckily on Monday his fever subsided and by Wednesday they said he was good to go. We are so happy to have a missionary out there. Its such an awesome experience. My little sister Delila could be leaving on her mission in the next three months or so, and after her its the baby Charlie. If he gets his papers all done and leaves right around his 19th birthday it could be four years before he and JB see each other. That is so wild! I have asked Charlie if he would really leave with only three months of JB’s mission left and he has made it perfectly clear that he is not waiting for JB to come home, haha. I guess we will see if he still feels that way after two years.

Well all in all things are great! I managed not to take ANY pictures of the move. And we have about three with JB before he left. But I don’t have them with me so you don’t even get to see them yet lol. I am lame, but I don’t care!

Oh. Yeah. and BTW. I’m pregnant!!! Woo Hoo! Baby #2 is due September 2nd. I am exactly 13 weeks today. I had an ultrasound last week just to check up on things and the “unofficial” word is that it’s probably another BOY! The ultrasound tech said its still too early to tell “for sure” but from what she could see it looks like a boy. We will find out for sure in a few weeks. But either way, boy or girl, we are really so thrilled. Can’t wait. Hopefully I can keep this baby in past June. That would be FABULOUS! LOL!

*Cafe Rio Pork Barbacoa*

Tim asked me to make Cafe Rio for dinner. I had never done it before and was a bit worried about how it would turn out. But it ended up being great! Tim loves the burritos and I love the salad so we made a nice big batch of pork and then went our separate ways after that haha. I found the recipe online and really loved it. I followed it pretty much exactly except that its the recipe for the salad. So for the burritos we just used regular tortillas drenched in the hot sauce and wrapped it up like an enchilada. Then I put it in the oven just long enough to get the tortilla soft and all hot and melty inside. YUM! I hope you enjoy this as much as I did!
